Now, to the recipe, which will be a culinary delight for venison-loving individuals. If you're one of my veggitanarianistical friends, I don't know what to suggest as a substitute for the deer meat...unless you can roll out some tofu and try that as a wrap. :)

Venison Roll-Ups
Strips of fresh venison (back strap)
-- pounded out and marinated overnight
in Italian dressing and seasoning
Lite cream cheese
Thick slab bacon
Sliced jalapeno peppers
Lay out venison strips and put a blob of cream cheese in the center of each piece, then add one slice of pepper.
Roll up strips and secure with a toothpick. Wrap a slice of bacon around and around each roll. Re-secure with toothpick.
Aren't these lovely? Now you're ready to put the roll-ups on the BBQ pit!

Veggie substitute - seitan (wheat gluten mock meat). :))
It is hard to get that tofu to roll up just right. This looks easier.

Those look like they'd snap your arteries shut in about ten seconds flat. Therefore, I approve heartily! Yum!
Huhn. I don't care what Miss Kathryn says, Clementine here says that looks good. Miss Clementine has recipes on Miss Kathryn's place, too! Bet you ain't never even had meat skins! Or ramps! I bet!
Got me some healing tips on there, too, but they ain't for nobody but healers to try.

Lori, great idea! Venison is the leanest meat you can get. Practically no fat at all, so, healthy.

I never realized venison meat was so dark, or is that just from the picture? I tried it once crumbled up and put into tomato sauce without the cook telling me. I thought it was just ground beef. Very sweet meat, at least to me.
I haven't had venison in a looong time. I don't have a lot of hunter's in my family and it's not like they sell it at our local Wal-mart. This looks really good though. We use to cook ours with beer! ;)

Well, I actually looked past the meat and saw your slate! We've got slate tiles, too, and I just love the warm look.

Ok--the year I ate deer meet-back in the 70's I ended up dropping to 93 pounds and looked like a skeleton. Never again.
Oh my gosh! You're sooo making me drool and miss venison jerky! YUM! YUM! YUM! My hubby shoots his own deer too. Cept he uses a bow. So cool.

mlh, yeah, in chili, spaghetti, sausage, etc., you can't tell the difference except there's less or no fat. :)

Janna, that slate is part of the reason I fell in love with the house. It's on the floor and similar in the bathrooms too in bigger squares. Can you say, "Can't see any dirt...ever?!" :)
