Fresh Green Beans
2 pounds green beans, snapped
1 large white or yellow onion, diced
4 garlic pods
3 cups water
2 Tbsp. lemon juice
1 packet Splenda
Salt & pepper to taste
small new potatoes
Olive oil
3 or 4 strips bacon (optional)
Saute onion and garlic (and bacon, if using) in olive oil while boiling water for green beans. Add beans to boiling water, then reduce to medium heat. Add potatoes and sauteed veggies. Cook for 30 minutes. Stir in seasoning and lemon juice. If you are using bacon to season, add it in too. Cook covered for a few hours or until beans are soft but not smushy. Yum!
