Fresh Green Beans




A good down home recipe for your file box today -- fresh green beans, or as we call 'em here, snap beans. Let me know if you try making them, and the variations you go with! Enjoy.

Fresh Green Beans

2 pounds green beans, snapped
1 large white or yellow onion, diced
4 garlic pods
3 cups water
2 Tbsp. lemon juice
1 packet Splenda
Salt & pepper to taste
small new potatoes
Olive oil
3 or 4 strips bacon (optional)

Saute onion and garlic (and bacon, if using) in olive oil while boiling water for green beans. Add beans to boiling water, then reduce to medium heat. Add potatoes and sauteed veggies. Cook for 30 minutes. Stir in seasoning and lemon juice. If you are using bacon to season, add it in too. Cook covered for a few hours or until beans are soft but not smushy. Yum!

This is an easy, good healthy one, Debra. If you were ever gonna get a toe wet in the kitchen, this might be a good one to do it on. And cooking = great therapy, IMHO. :)

I love fresh green beans. But the last two times I made them, the string grossed me out as I was eating. How do I fix them without the string being a part of the meal? Blech. Tell me that and I'll be making this recipe tomorrow!

Jaycee girlllll, let's talk. First, there are different varieties of green beans, and you must be buying what southerners call string beans. If you can't buy other kinds (without the string), you simple snap off the ends before cooking. The pointy end is usually the one the "string" grows from, so after you pop off the tip, gently pull it downward along the seam, and the string will come off along with the end. :)

Jessica, y'all midlanders and yankees don't know what all y'all missin' in the food department. LOL. We love all our mixing and flavor combos.

Hey, Colby! I'll be getting your "guest room' ready today. Bandit would just LOVE a new sister. Hope you don't mind sharing a sock basket with him. hehe

Thanks for the recipe. We had beans last year in our garden. Never a huge amount, but enough to have made this recipe. Hopefully, I'll make it this season!

Ha! That explains alot! Thanks for explaining that. Now I won't shy away from them like I'd planned. Those strings messed my whole darn meal up. And weren't very helpful toward my awful gag reflex!! Now, to get me a rocking chair and build me a porch, so I can snap me some beans...

I'll let you know how they came out.
