Tasty Tuesday ~~ Sopapilla Cheesecake

Because I love y'all so much, I'm giving you a bib warning up front. My wonderful, beautiful, smart stepdaughter Jessica made this drool-making dessert for my birthday this past weekend, and I think you'll like it a LOT. Yep, it meets Gumbo Writer's criteria -- easy, quick and g-o-o-d!

[P.S. to Jess --- Nana LOVES the crock pot liners! And a personal request to y'all: please keep Jess and her husband Bill and the whole family in prayer. He is leaving for Afghanistan this month to serve for a year. God bless our military families for their tremendous sacrifices!]


Sopapilla Cheesecake

8 oz. fat free or reduced fat cream cheese (softened)
1 cup sugar
2 tsp. cinnamon
1 tsp. vanilla
1 pkg. Pepperidge Farm Puff Pastry 
2 Tbsp. melted butter (marg. or Smart Balance)

Mix cream cheese, sugar and vanilla until smooth. Put in microwave for 10-20 seconds in microwave to warm it up. 

Place pastry sheet on greased cookie sheet. Spread mixture almost to the edges. Top with a second pastry sheet. Pinch edges together. Spread with melted butter. Sprinkle on mixed sugar and cinnamon.

Bake at 350 for 30 minutes or until golden brown. Let cool a bit, then cut and serve. Watch your guests' faces light up! (Refrigerate leftovers -- yeah, like there'll be any of those.) :D

I keep fat pants in my stock for just these moments of "Easy Quick and Good" recipes..Prayers and good luck honks for Bill and the whole family comin' in from NYC. Peace Irish, love the pizza cutter too, never used that for a delight like this.

Thanks for prayers, Andrea. And I don't think the recipe's too bad if you use FF cream cheese, Smart Balance, and cut down on the sugar a bit. But it IS dangerously delicious. HAPPY BIRTHDAY, fellow Virgo!

I'm due for a fat pants treat and this recipe will do it...yum!

Although my hub's rather recently retired from the USMC, we still swirl in that arena, now with the sons/daughters of friends off to war. Two weeks ago I had a long conversation with a civilian, what we call a 'civilian Marine', who works with Afghan women. She and others in the unit travel with Marines to get to them. Rachel's tour ends soon; she's volunteered and has been accepted for a second tour.

Most of the active duty Marines we know have volunteered for subsequent tours.

Your family is now my family. Love 'em all!
