Tasty Tuesday Recipe


Another installment from my twin sister Alaine. Hope you enjoy the recipe (if not the commentary). hehe.

I'm trying to convince her to start a blawg, so if you have any words of inspiration or reasons why the Blogosphere is a wonderful place to hang out, please pass them on to her via the email at the end of her cookin' instructions.


Alaine’s Cajun Cornbread

1 box Jiffy Cornbread Mix
½ cup milk
1 egg
1 can cream corn
1 cup shredded cheddar cheese
1/2 stick of butter
Tony Charchere Seasoning
2 jalapeño peppers
cracklin crumbs (amount up to you, but at least 1 cup)


* Preheat oven to 325°. Put half the butter in an iron skillet (**yankees will probably go ahead and use some sort of T-Fal type bakin’ thang, but be warned: NO self-respecting cornbread has ever been produced in anything other than a real-live iron skillet.) Place skillet into oven.

* Pour canned corn into a colander and rinse ‘cream’ off. Sauté chopped peppers in rest of butter. After 3 minutes, add in corn and “fry” til light brown. Mix remaining ingredients in a bowl. When corn/peppers are brown, add them too.




(I don’t have the energy to educate **yankees on the origin and definition of cracklins, so y'all just scoot over HERE for some schooling at deltablues.net! They'll learn y'all all the important information. Pretty dayum funny, too.) ps: Don’t embarrass yaself by referrin' to them as, “cracklings,” neither. They are CRACKLINS. Period. ‘Bout as stoopid as sayin’, “pee-can” or “crayfish.”)

* Add two (Southerners, add the real amount) shakes of Tony’s. Again: Tony’s is a necessary Southern ingredient. Part of the holy trinity spice group—Tony’s, garlic, Tabasco-(duh!).

* Mix ingredients and pour into skillet. Bake until golden brown. Pairs up well with white beans containing leftover Welcome Home Ham from last week. (Bean recipe, another day.)

**Yankees who can’t cook beans yet, go on and serve cornbread with chili or whatnot. Just not nothin’ like pate’, or Chilean sea bass, or tofu surprise. (Yeah, there's a surprise fer ya. Tastes like catfish guts if anything at all!)

Angie - your sister is just lucky that this Yankee has southern parents! We always had white beans with cornbread growing up, and turnip greens, black-eyed peas, and all the other good southern dishes, even if we did live outside of Chicago.

BTW - Mom never made the cornbread in a skillet. She had her cornbread pan, would melt the shortening in the pan, swirl it around to coat, and then dump the melted grease into her cornbread mixture and drop by large spoonfuls into the pan. YUM. Oh, and she didn't really have a recipe, she just threw things in. Hate it when that happens.

I'll have to make this recipe in my cast iron skillet that has two purposes: fried chicken and cornbread!

Scott - I love that you have a special reserve skillet for certain foods. :) No matter where you live, you're still a southern boy at heart!

Eileen - I went to the cracklin site and it was pretty fun reading and good pics to go with the process.

'Ats what I tole her too, Kat. (She's on FaceBook.) No ma'am, you could never be anything but a southerner. Too much Blackfoot and southern genes in your pool. *grin*

I've always loved reading recipes, but Alaine's are the best. As a Yankee to the core, I appreciate the cultural elucidation. I'd read her blog gladly.

So, the two of you, growing up in one house. I'm guessing lots of stomach aches from laughing, and lots of craziness. ? :-)

Yum-yummmm! Looks like a great recipe, Alaine! I usually make mine from scratch, but Jiffy is the next best thing, for sure. Also, love the commentary, Angie. You sure set dem Yankees straight on a few things!

Well, this Yankee (I say that in the general sense, not in the New York sense - ugh) loves some good cornbread, except we mostly call it johnnycake. And our beans are Boston Baked, thanks.

(All kidding aside, looks good. And get a damn blog, woman!)

Aw ma Lawd! I love me some cornbread - it's one of my favorite things in the whole wide world - just ask the hubby. And the Jiffy box was a fixture in my house when I was a kid.

If Alaine's recipes are this awesome, she should TOTALLY have a blawg of her own!

Oh, yummy. Your cornbread recipe reminds me of one I used to use when I had kids at home. I must show it to my friend Angel May (http://angelmaysgrowingpains.blogspot.com/) who lived in Alabama until just a few years ago and has Very Strict Ideas about what constitutes True.Southern.Cornbread. Better still, next time I see her, I'll make her some, and I'll use your recipe. ;>)
