Good morning all you foodies and food lovers! I learned something new today in researching Colonel Sanders for an image: the most famous fast food chicken man also recorded an album titled Tijuana Picnic. Who knew?
Today's Tasty Tuesday recipe is a Southern favorite -- friiiiiiiied chicken. {Yes, you have to say it that way with the long "i" all drawn out. It helps the taste buds start sweating in anticipation.}
I realized the other day I hadn't fried anything in over a year, so it was high time I got out the big pot and Canola oil and got to work. I'm posting some pics of the golden delicious results, and a few of the side dishes I served with the chicken. Ca c'est bon! Hope you enjoy:
Southern Fried Chicken
8 large chicken thighs
4 eggs (beaten) in small bowl
6 cups flour in larger bowl
Seasoning to taste (salt, pepper, Tony's or cayenne pepper, lots of garlic powder)
Canola oil
Season both sides of chicken. Coat well in egg, then dredge thoroughly through seasoned flour while oil heats on medium high temperature in large frying pan. (Use one that has a cover. This makes outside crispy and inside tender.)
Fry with lid on for about 10 minutes on each side. If chicken seems to be cooking too quickly, turn the heat down. Cut to bone and make sure no red appears. Cook until golden brown.
Drain chicken at a slant on paper towel. Serve, eat, watch the smiles appear. Yum!
Broccoli & Cheese
1 Bag frozen cut broccoli
2 Cups shredded cheddar cheese
Salt & pepper
Boil broccoli according to package instructions. Drain and return to pot. Season, mix and add cheese. Put lid back on pot until ready to serve.
Sensation Salad
Romaine lettuce (wash and chopped)
Baby greens
**Fresh garden tomatoes
1 Can black olives (sliced)
1 Jar marinated artichoke hearts (chopped)
Sensation Salad Dressing
8 oz. Grated Peccorinno Romano cheese
1/2 Cup Parmessan cheese
1 Cup Olive oil
1 Cup Canola oil
3 lemons (juiced)
4 Tbsp. balsamic vinegar
6 cloves garlic (minced)
salt & pepper
Mix ingredients together and pour into a jar or recycled dressing bottle using a large funnel. Mmmmmmm!
[**Non-traditional additions.]

I want this same meal when I come to town! Pleeeeeeeeese ??? :)
OMG, can't tell you the last time I had fried chicken! oohhhh, or sensation salad!
Fried chicken is THE best thing to come out of the south (excluding you, of course!)
I'm coming to your house for dinner!
Analisa - My Bigmama taught me that trick so fried stuff doesn't get greasy and stays crispy! And she drained on newspaper. :)
LOL Carol. I bet your fried chicken can't be beat. (I've seen your recipes and pics at your blog!) We DO need to make a plan for when you come to the LA Book Festival this month!
Kat - Want me to put it on the menu for when you get here? :D
...and crawfish, hunh, Suldawg? LOL. Thanks.
Joey (JKS) -- I think there may be one piece leftover in the fridge if ya want it. :D
Reading, Writing, Snickering and Eating. We got the four corners covered here. Pass the chicken, please!
Yummmm! There's something about fall that makes me want to cook lots and lots of food. After these great pictures, now I really need to cook and feed someone. :-)
Angie, that is my kind of meal!!! Wow, you're making me hungry!
Thanks for the recipes!
You are really cooking up a storm, sha! Everything looks dee-lish!
MMMM! Now THAT'S the way to make fried chicken. Ain't nothin' fine-ah!
I never knew how to make fried chicken, but it sounds pretty easy! Thanks for posting.
Now I'm craving fried chicken! Thanks for sharing, Angie!
My mouth is watering, oh yum!! I need to have some of this soon.
My step-mother was from Tennessee. She made the best fried chicken. She used to soak the chicken parts in buttermilk for several hours, or overnight prior to frying. I have her recipe but have never been able to duplicate her results. Maybe you have to be Southern? Your fried chicken looks every bit as good as Nana's (my children's name for her.) Talk about finger licking good. I wonder if the album is any good?
You're making me hungry gal. For health and less mess––actually mostly the mess, I've been oven-frying for years. Almost as good.
That chicken looks yummy golden brown! :O)
I'll try that salad dressing. I love friiied chicken, too. Yours looks much better than mine does. :( Great meal!!
Thanks for the recipe.
My goodness Angie! You have outdone yourself today!
Oh, you're getting me into a cooking mood. It's been way too long since I actually cooked.
So much has been going on lately, so much stress, long work days, tiring weekends. Perhaps I'll cook some this weekend. Thanks for such a happy post!! ♥♥
I'm starving. Show me how to make chicken fried steak?
Crap sakes, that looks good! There goes my diet!
Oh dear, I am gaining weight just reading here :) YUM!

Found your blog over at Lazy Writer. I'm originally from New Orleans and lived in BR for many years, so I always love to find a hometown blogger. This food looks delish!
Well. Now I'm hungry.
I think I would have been able to resist the recipe until I saw the photos. Everything looks wonderful. My grandmother used to make the best fried chicken...it wasn't southern style but fried chicken always reminds me of home and hearth.
