Chicken Noodle Soup

Chicken noodle soup is what my friend Myrna calls "Jewish penicillin," and she's right. The rich, aromatic smell and taste of homemade soup is good for whatever ails ya. So, here's how to fix it:

Saute your standard veggies of onion, garlic and celery. Add that to a big pot half filled with water, half chicken stock, and any juices you have left from browning chicken thighs in the oven. (I do the thighs the day before for a few hours, seasoned and covered with foil so I can skim off the congealed fat before adding to the soup.)














Throw in a bag of egg noodles prepared according to instructions. This time, I also added chopped fresh carrots to the noodles while they were boiling. De-bone chicken thighs and cut into smaller chunks. Throw that in the pot too. Season to taste and cover. Bring to a medium boil, then put the pot lid askew so it'll thicken up for about 30 minutes on simmer. Be careful your goodies don't stick to the pot; stir every now and then.













Now you just let simmer on very low for a couple of hours and you're ready to serve. Goes great with cornbread muffins!

Mmmm . . . sounds good, and perfect for the gray day here in Ohio! Now I just have to find somebody to make it for me (I have "issues" with meat with bone-in meat). I'm sure it wouldn't taste quite as rich with boneless chicken breast, but maybe I'll try it with that.

Maybe if I'd ever had it homemade I would like it. So funny about it helping people. Every time my husband feels remotely sick, he says in such a weak, pitiful voice, "Will you make me some chicken noodle soup?"

I thought I'd pop on over from Just Write and check out how things are over here. I didn't expect to have my stomach growling before I'd made it to the 2nd picture! LOL! This looks and sounds delicious. Actually, my mom always made homemade Chicken Noodle Soup for us every winter growing up. Her key to her noodles was that she used a specific kind of frozen noodles. She said anything else wouldn't work as well. Other than that your recipes are fairly similar! What a cool blog! :D

Great recipe. In Maine, when the days get short, the temps plummet, and the snow starts to pile up, lots of comfort food is a must!
