Comfort Food - Best Mac and Cheese


From the Gumbo Writer recipe file today comes the most beloved of all comfort foods -- rich and creamy Macaroni & Cheese. I made a humongous pan for Thanksgiving, so cut it down to size as needed if you're going to make a batch yourself.

Especially for my veggytarianistic friends, I hope you enjoy. Next week I'll have a recipe for the carnivores amongst us.

Best Ever Mac & Cheese

1 Box Velveeta Cheese
32 oz. bag of shredded cheddar
2 boxes angel hair pasta
1 16-oz. jar of Alfredo sauce (I like the one with roasted garlic)
3 c. milk
1/2 c. butter
You'll need a huge pan for this, or one of those aluminum ones works great. Cook pasta according to package directions, then drain. Line pan with a layer of half the Velveeta cut up in hunks, plus 1/3 of the bag of cheddar.

In a large pan, heat milk, butter, and 1/3 of the remaining cheddar cheese on low for 5 minutes. Stir frequently. While it simmers, add about half of the hot pasta to your pan along with remaining Velveeta and the Alfredo sauce. Stir gently.
Layer on the rest of the pasta and the liquid mixture into your pan. Mix until well blended. Cover with aluminum lid or foil. Let rest overnight. Before serving, cook in oven at about 300 degrees covered for an hour. Watch the smiles appear as your guests take that first bite!

You always make me hungry before I've even eaten breakfast!
But I have to say--it would be hard to switch over--my husband thinks I make the best mac and cheese ever and since I don't cook all that well--I'd be pure afraid to mess with that one!!

Velveeta! Ms. B is aghast! But, Ms B knows that Velveeta is loved by many and adored by many and it has it's place in Americana comfort food

(shh-and Ms B will not admit to Chef that she has partaken of Velveeta'd dishes -shhhhh, do not let Chef know she would love to shove her face into that pan and goggle it up! shhhh.)

Oh ... the veggytarianistic among us thank you for remembering us. And with such a yummy looking offering!

OK ... I might be the only person in the universe to say this .. but ... I've never eaten mac 'n cheese. Didn't grow up with it ... and just haven't ever had it. Maybe now's the time to start, huh?

Yanno, I never had mac n' cheese using angel hair pasta. This would be a fun difference instead of always using elbow macaroni.

omgoodness.....that is a freakin huge amount of mac-n-cheese! i like the idea of getting rid of the elbow macaroni - it just seems to dress up the dish.

Wahoo! Looks like that would feed my clan for dinner tonight... I'll have to scrounge around and see how much of those ingredients I have... and then make a poor man's version! LOL! With veggies of course, what a great idea!

Oren, isn't it funny how a regular ol' southern dish has become a staple of big family gatherings where you wouldn't expect it? Hugs back.

Terri, LOL on the "pure afraid," but I hear ya. Would love to try out your recipe. Gonna post it one day?

Ms. B, your "slummin'" ways are safe with me/us! I've also made the dish with regular sharp cheddar chunked up and it's just as good. "Velveeter" seems to be the crowd pleasure, tho. :)

Small! You ARE the only person I know here who hasn't had that culinary delight! PUH-LEASE try it. You'll thank me later. LOL

The angel hair makes for lots quicker cooking and adds to the all-over creaminess, IMHO, mlh. Lemme know if you try it. :)

This looks wonderful. I was raised on Velveeta but haven't used it in years. I love the idea of using Angel Hair pasta and the Alfredo sauce. I made a copy and I'm going to give this version a try. Yum!
