Tasty Tuesday Recipe ~ Cajun Pickles

I don't know what came over me last week, but I got the notion to try my hand at making pickles. Unlike most of my trial runs in the kitchen, this recipe came out well, and it really didn't take that long. And what's better than having a few jars of spicy pickles in the 'fridge, and a few to give away?

Cajun Quickie Pickles

6 pickling cucumbers (washed and dried)
3 cups icy cold water
1/3 cup white vinegar
1 Tbsp. pickling salt
1 Tbsp. pickling spice
2 tsp. sugar
1 tsp. dill seed
8 large cloves garlic quartered
Cayenne pepper or Tony Cachere's to taste



Cut each cuke into eight spears. Sterilize canning jars, rings and lids.


In a large bowl, mix water, salt, vinegar, spices. Stir until dry ingredients are dissolved well. Bring to a boil.




Put cucumbers in clean jars. Fill jars with hot liquid. Add garlic. Seal and put in fridge for 24 hours before serving. Crunchy, crispy deliciousness! **Makes 4 pints.

OMG, they sound and look SO good! Do you have to be a canner to make these? I have never canned anything before and don't know how to seal a jar. Maybe I'll go YouTube it!

Marilyn, I don't know nuffin 'bout bein' no canner! All I did to sterilize the jars was to boil them in water first. :) Then put the lids on and tighten them up. Quick....easy....yummy!

Deb - We have farmers markets and little outlets called Fresh Pickins all year round here. I bet this recipe would work almost as well with regular cucumbers.

Donna - Lemme know if you (well, not you per se, but your hubby) tries 'em. LOL

I'm glad they turned out for you! LOL My stepdad tried making pickles when I was a kid. I don't know what went wrong, but something did because he didn't end up with anything too picklish. LOL

My dear Angie, I read this post and all I could think about was the Andy Griffith Show episode where Aunt Bee makes a batch of "kerosene" pickles. I'm glad yours turned out more like Ms. Clara's which took first prize at the fair -- did you go just wild with allspice? :-)

Huh - I always assumed you had to pickle things for a much longer time period. 24 hours? Maybe I'll try to make me some pickles!

My grandmother used to make these. I haven't been able to can anything with the lids on right...but have decided your recipe looks like crunchy fun Now.
