Today's recipe is a great one for summer. It's light, refreshing and the three veggies used can easily be found at local markets.
Hope you enjoy the yummy goodness of this salad and/or side dish I serve often in these loooooong hot months.
Marinated Veggie Medley
2 Vine ripe Creole tomatoes
1 Large cucumber
1 Medium Vidalia or red onion
1/2 Cup Robusto Italian dressing
Sea salt, black pepper and garlic powder to taste
Clean vegetables and dice small. Put into serving bowl and add a thick layer of dressing. Season to your preference. Refrigerate, stirring once every few hours until ready to serve as is, or over lettuce leaves for a nice salad.

YUM! We have a similar salad - but it has green peppers, cucumbers, tomatoes, and vinegar and oil. Simple and perfect for the summer!

This salad looks so good. I make a similar summer salad and keep a container of it in the fridge, all summer long. It is so soothing and very alkaline, which is good for the old bod.
The version of this salad that I grew up with, and that says SUMMER to me, involves cucumbers and Walla Walla sweet onions and a homemade dressing. Tomatoes are for eating whole with salt!

Anything is better with Feta? It's good but not that good. The salad looks great and probably tastes better than that. I'll answer for Terri - No.

Barb, I don't "do" celery or bell peppers either. *shudder* (Don't hate me, you lovers of those two veggies!) So far I haven't found a recipe that's suffered from removing those items. LOL
